Certaldo onion: a symbol of the territory
The Certaldo Onion is an ancient onion, so much so that it is part of the coat of arms of the municipality of Certaldo .
Sweet and lovable like the hills of Valdelsa, tasty and intense, like the people who have always inhabited this land, the Certaldo Onion is a niche product, a gourmet’s delight since the time of the most illustrious certaldese; Giovanni Boccaccio speaks of it in Decameron 10-VI:
“Certaldo, as you may have heard, is a Castel dei Val d’Elsa placed in our contado….with what ‘be what that land produces onions famous for all of Tuscany”
The Certaldo Onion therefore is a sweet onion, rounded in shape flattened at the poles with a deep pink color, not red. It consists of two varieties:
- statin (fresh spring onion) is harvested from April to September
- Vernina (dried onion) is harvested in August and has consumption until December
The Certaldo onion being very sweet to lovable is eaten both raw and cooked and is suitable for many dishes.
