Agricultural tradition and love for the Certaldo Onion
Welcome to Orto di Fogneto, a farm in the heart of Valdelsa that is an active part of the Certaldo Agricultural Producers Consortium, established in 2013 to promote local products.
Francesco, president of the Consortium, is also a Guardian Farmer of the Certaldo Onion Seed, a seed registered and guarded by the Region of Tuscanyto protect the quality and continuity of a unique and historic vegetable.
The Consortium has exclusive use of the “Certaldo Onion” trademark and follows the entire supply chain: from seed to plate.
We deal directly with:
- seed production and sowing
- cultivation and harvesting
- cleaning and processing
- direct sales and marketing
But our commitment does not stop at the field: we also promote the Certaldo onion through social media, local markets, events and tastings to enhance the product also through guided tastings and thematic chopping boards.

These products are all featured in the tasting board.
Upon reservation, vegetarian boards with vegetables and savoury tarts or flan

- Winter: Cabbage, fennel, leeks, squash, chard, spinach, radicchio
- Summer: Tomatoes, zucchini, cucumbers, peppers, eggplant, salads, poponi, watermelons, potatoes
- Artisanal cured meats processed as they used to be, with the same care as always.

Certaldo onion: a symbol of the territory
The Certaldo Onion is an ancient onion, so much so that it is part of the coat of arms of the municipality of Certaldo .
Sweet and lovable like the hills of Valdelsa, tasty and intense, like the people who have always inhabited this land, the Certaldo Onion is a niche product, a gourmet’s delight since the time of the most illustrious certaldese; Giovanni Boccaccio speaks of it in Decameron 10-VI:
“Certaldo, as you may have heard, is a Castel dei Val d’Elsa placed in our contado….with what ‘be what that land produces onions famous for all of Tuscany”
The Certaldo Onion therefore is a sweet onion, rounded in shape flattened at the poles with a deep pink color, not red. It consists of two varieties:
- statin (fresh spring onion) is harvested from April to September
- Vernina (dried onion) is harvested in August and has consumption until December
The Certaldo onion being very sweet to lovable is eaten both raw and cooked and is suitable for many dishes.
